Oh, the wondrous things you can do.

There are a million uses

and who knew?

Alright, enough rhyming.  There are literally a million uses falling short of an organic lubricant for Nasa.

Here are some of them:

 1.Simple easy Body lotion.  It states it right on the back of the bottle….under cooking.  So after you sautte up some dinner lather some on your skin if your are feeling a little dry.

2. Sunscreen.  I know of a few people that substitute organic Coconut oil for sunscreen   They never burn and come home extremely tan.  I have not attempted this one yet but I know it is an option.

3. Chest rub.  Ditch the Vicks and make your own. Sonia at Natural New Age Mum has a recipe for a homemade chest rub.  This one I am actually going to make!

4. Body Scrub.  Shania at Food for my Family has a great recipe for a homemade organic Coconut oil and Ginger body scrub.  It looks fairly simple to make and you just may have most of the ingredients on hand. Another recipe for body scrub can be found over with Lindsey at Fashion Food & Foreplay. Hers includes Lavender!

5. Diaper Rash cream.  Wabi Sabi Baby has an all natural recipe for Coconut oil Diaper rash cream.  This one is golden. I was never comfortable with diaper rash cream and all the additives being smeared on my boys.

6. Eye cream.  A friend of mine makes her own under eye cream.  About a 1/4 cup of Coconut oil with some vitamin D and E. (soft-gels broken and squeezed into the oil).  Microwave it for a few seconds to make it a little easier to stir. Wait for it to cool and apply.

7. Hair Cream.  Add a little health to your hair!  Check out Coconut Oil Benefits for You for a detailed method of applying and “healing” your hair.

Not quite a million on this page but I think these will get you going if you plan on substituting Coconut oil for almost anything!

Taking a day off and standing on my Mom Soap box

Chicken Noodle Soup for a coldToday I am sick and I hate being sick.  I go out of my way not to get sick and for the last year I have been avoiding colds like Congress avoids progress.  However today I gave in, I have caught a cold and I am bowing out.

This morning, I rose before the sun and my alarm clock.  I stumbled into the kitchen and proceed to go through the routines that accompany a regular day of activities.  Except today I was going three times slower and attempting to slurp down two cups of Emergen-c tea. I kept repeating to myself, I have too much to do, I can’t get sick. Just one more cup of tea and an Advil Cold and Sinus and I will be fine.

It was during this moment that I stopped myself and realized, it was okay to be sick. No it is not fun, I am still in my sweats and my hair is strikingly similar to that of the snakes on Medusa but I need to stop.   I need to take some time off from the busy routine of life and rest. I believe this holds true for all moms.

As moms, we have so much on our plates that a simple head cold can and will send us reeling.  The schedules, practices, meals and basic day to day maintenance typically does not happen if we are down for the count.  So to keep things operating in an efficient manner we truck on through and making ourselves miserable in the process. Today I am saying no.

Today my house is a mess.

Today there are dinosaurs and tracks all over my floor.

Tissues are on my coffee table and YES there are dirty dishes still in the sink.

AND I DON’T CARE.

Moms need a day off occasionally to rehabilitate. If we get the same obnoxious cold that your kid had last week because he/she brought it home from school, call in sick. Order in, sit on the couch and rest. In my case…blog.  There is absolutely nothing wrong with taking at least one 24 hour period to fix your ailing body.

This is me standing on my mom soap box today.  Moms, we are busy, important, and typically insane people that never stop.  I am encouraging for you to take a day off if you are sick.  Everything will still be there tomorrow.

My Mom Soap Box Homemade Chicken Noodle Soap Recipe:

1 – 4/5lb chicken cut up

6 cups of water

1/2 cup chopped onion (1 medium)

2 teaspoons salt

1/4 teaspoon black pepper

1 bay leaf

1 1/2 dried medium noodles (I use egg noodles – 1 cup)

1 cup chopped carrots (2 medium)

1 cup chopped celery (2 stalks)

2 tablespoons snipped fresh parsely

1. In a Dutch Oven combine chicken, water, onion, salt and pepper, and bay leaf.  Bring to a boil and reduce heat.  Simmer  covered about 2 hours or until chicken is tender

2. Remove chicken from the broth.  After it has cooled remove the meat from the bones.  Toss the bones. Cute meat into bite sized pieces and set aside.  Discard bay leaf and skim the fat from the broth

3. Bring broth to a boil. Stir in noodles, carrots, and celery.  Simmer, covered for approximately 8 minutes or until the noodles are tender. Stir in Chicken and parsely and heat through.

Sidewalk Paint , Sightword Hopscotch, and Chalk Body Outlines. Outside fun!

Yesterday I learned some new tricks for outdoor fun with my kiddos.  A steering team member in my MOPS group spoke about fun activities to do with your little ones.   She gave out some great recipes and today I am going to share one with you AND show you some of the fun we had outside…and yes, Chalk body outlines will be included.

Sidewalk Paint
1/4 Cornstarch
1/4 cold water
Food coloring of your choice
Mix together and paint.  (Yes – it does wash off)
Here they are hard at work.  The cornstarch dried with a nice green tint.  They loved it. Our sidewalk leading up to the front door is very festive.
I had another idea while they were creating their masterpieces.
Sight word Hopscotch
My six year old loves math and is not a huge fan of reading. He gets frustrated and impatient when trying to sound out words.  However this game proved to be very effective for his frustration. He didn’t mind reading while he hopped from square to square and his confidence was on a major high! Now, little does he know, I am going to start including words that are a little more challenging!Here is my favorite art project:

How to make Lemon Curd

During my quest for the perfect cupcake, I ran into a Lemon Cupcake recipe that called for lemon curd. I love lemon curd and immediately wanted to try it out. I only had one problem, the lemon curd that I love (Trader Joes) was not in my immediate possession. I had to wait….and wait… and wait… UNTIL this last Saturday.

My local co-op produce group, Bountiful Baskets, gave me six or seven lemons in my basket. I had no need for that many lemons! Then I got to a thinkin’.  What if I MADE myself some lemon curd.   And I did. Today. And it was good!

The site I found the recipe on is Fine Cooking.  They weren’t kidding when they said it worked.

Ingredients:
6 tbs unsalted butter, softened at room temperature
1 cup of sugar
2 large eggs
2 large egg yolks
2/3 cup fresh lemon juice
1 tsp. grated lemon zest
Wooden spoon
1. Beat the butter (if your butter was in the fridge pop it in the microwave for 20 seconds and it will be at room temp.  Not hard and not too soft) and sugar with an electric mixer for 2 min.
2. Slowly add the eggs and yolks. Beat for 1 minute.
3. Mix in the lemon juice.The mixture will look curdled but it will smooth out as it cooks.  It really does!
(this is right after the transfer from the bowl to the pot)
4. In a medium, heavy based saucepan (I have an old capahlon) cook the mixture over a low heat until it looks smooth.  The butter WILL melt and it will look smooth.
5. After it is smooth INCREASE the heat to a solid medium and cook.  STIRRING CONSTANTLY until it thickens.  15 minutes.  I used a timer and it was 15 minutes exactly.
DO NOT LET IT BOIL
You should be able to leave a path with your finger on the back of your wooden spoon
6. Remove the curd from the heat and stir in the lemon zest.  Then transfer it to a bowl and press down plastic wrap on the surface to keep a skin from forming and place it in the refrigerator to completely cool.
Now the recipe says it will keep in the fridge for about a week and the freezer for 2 months.

I felt like such a pro today! I made my own lemon curd, it is edible and it looks cute in Mason jar.  All good signs.

Brookies.

Are you asking right now – What are Brookies?  I am about to tell you!  Lucky you!

Brookies are the marriage of a freshly baked chocolate chip cookie and brownies squished together and dipped in chocolate.  AH!  What a great idea!  Who came up with this?!  All I know is that I found this culinary masterpiece over on Inside BruCrew Life.  She made these when she was stuck indoors during the snowstorm and I made these for the Valentines day party at my sons school.

I will run you through this recipe:
You will need
Brownies (I used a boxed mix – Just like  Joceyln at BruCrew)
Chocolate chip recipe.  Everyone uses their own variation. I made white chocolate and chocolate chip cookies
Chocolate chip pieces for melting and dipping

I did not post all the individual requirements for each step.  That is a lot of ingredients

1. First bake your brownies and leave them out to cool.
2. Next make your cookies.  Like I mentioned previously, I made the standard chocolate chip cookie recipe and mixed in half white chocolate chips and chocolate chips.
3. Don’t make your cookies too big or they will be a pain to squish into balls after they have baked.
  See.  All mine are relatively small. I learned the hard way.
4. WAIT to squish them into balls. Not too long but until they are warm!!!  I did not listen to previous bakers and apparently thought my hands were made of steel. They were HOT. It hurt.
5. Once the cookies are balled up put them in the freezer until they are frozen.
6. After freezing is done get those brownies that are waiting on the sidelines.  Cut them into small squares and wrap it around the frozen cookie ball.  Then put it BACK in the freezer.  Wait until they are frozen again.
7.  Once the balls are frozen pull them out and dip them in the melted chocolate chips and decorate.
Number 7 is where I failed.  I can not dip ANYTHING into chocolate and have it come out and look beautiful.  They look lumpy, odd, and a little sad.    Kinda like this….
This was taken this morning as we were about to race out the door. I realized I forgot to take a picture of the finished product.  My son added the two toned sprinkles after we dipped in chocolate the night before.
Eh, they may look weird but they were a hit at school today!

I feel so out of it

I do. I really do.  After the giveaway things began to snowball. Not in a negative way but in a too busy for anything else, kinda way.

Here is a little bit of news for all you diet followers. I had my first cheat day.  Oops.  It was bad and NOT worth it.  I ate the worst stuff.  Seriously, think Oreos X 10.  I always thought during my 500 calorie days that if I was going to cheat I was going to make a great high carb meal and enjoy every morsel.  But it turns out most cheat days aren’t even that great. You just stuff your face with junk.  That is what I did.  I gained 2 1/2 pounds. In one day. UGH.  Lucky, I had the prescribed steak day (eat nothing all day and after 5pm have a nice juicy steak and a big tomato) and I lost two pounds by the next day.  Whew!

This next week I will have a baking extravaganza day. Here is why….

I bought it.  I couldn’t help myself.  The product placement people got me….  It has recipes like this one. Rocky Road Brownies.

I also am a frequent visitor to cooking websites such as The Fudge Ripple and Inside BruCrew Life. They have amazing recipes for cupcakes, homemade vanilla extra, and other yummy foods.  I am dying to try my hand at them.  So my plan is to invite some friends over, bake like crazy, sample and then give most of it away.   I am going to post the results of each recipe I am going to try SO if you have something awesome and want a little press just leave the link in the comments!

Alright, a slightly meaningless post today but I wanted to prove I am alive and give some folks the opportunity for to give me their recipes.  (Baking day is Friday)

Now I am off to kill the bug that is under this cup.  It has been there since last night.

Easy Recipe with leftover Ham and the Ugly Blackberry Cobbler

As I stated in my previous post, I am starting a diet on the 3rd of January. So between now and then I am enjoying certain foods and recipes that I have always wanted to try my hand at…..Now don’t get me wrong, I am not going on a pigging out fest! Just thought I would try it out, plus it got rid of a lot of our leftover ham!!

Ingredients
1/2 cup chopped green pepper
1/2 cup butter
10 slices white bread – cubed
2 cups cubed and fully cooked ham
1/2 lb of cheese – I used Monterrey jack and mozz
6 eggs
2 cups milk
1 tsp ground mustard

1. In a skillet saute the green pepper in the butter until it is tender
2. Remove the pepper and leave the drippings
3. Combine the pepper, bread and ham in an UNGREASED 13x9x2 baking dish
4. Add the cheese to the drippings in the skilet and stir until the cheese melts.
5. Pour over the bread mixture
6. Beat the eggs, milk and mustard together and pour over everything in the pan
7. Cover and refrigerate overnight
8. Remove 30 minutes before baking and then bake at 300 for an hour

Now- THIS IS NOT a low cal meal!!!  I made it yesterday morning and we ate it for dinner.  I couldn’t eat too much because it was fairly heavy but it was VERY tasty! I can see making this for a group meeting or a get together…

Here is the picture of the outcome!  I actually made it successfully!  Nothing was burnt or overflowing from the dish.. sadly this does happen….See below….

I found a great recipe for Blackberry Cobbler on The Pioneer Woman website.  We had a lot of blackberries and it looked great…. Hers looked like this when it was finished:

It overflowed on the sides and the edges are too brown.  It tasted good but I wanted it to be pretty too.  *Sigh* I will have to try again. – Later – After the diet.

Can I pack any more into the schedule?!

As you all know, we are moving.  We are moving NEXT Wednesday.  Soon after I posted about our home, I went on an extreme search for a rental.  It is Christmas, I want to decorate and I want to do that in a home that is not filled with boxes.   Well, I found a home and within three days we signed the lease and scheduled a move in day.  Yup, I am that good….Actually, God is that good.  He gave us an AWESOME place.  Seriously, it’s amazing. I will post pictures as soon as we are in.

I am co-hospitality for our Mops group and because my partner in crime did an fantastic job on a busy meeting earlier in the year I took over decoration for the Christmas meeting.  I had to come up with a couple of ideas of decor…Check out the inspiration…

Cranberry centerpieces are beautiful, simple and perfect.

Now – Please note that this needs to be prepared by Tuesday of this upcoming week.  I am leaning towards a combo of all three….However the first photo will take more time that I have available.

Finally, I have a waiting list for hats! I still am working on hats from a hugely successful boutique in November.  I believe I have about 10 more to finish!  My goal is to have them done in the next week and a half!

The question I have for you is, Do you work well under pressure?  Because for some reason, I do.

Homemade Laundry Soap – It is easier than you may think!

**WARNING:  I have When Harry Met Sally on in the background.  Quotes from the movie may appear sporadically, or not.**
Approximately one month ago my good friend took an afternoon to teach me how to make laundry soap. Today I am going to show you how to do it….
Supplies Needed:
1 bar Ivory soap, grated
1/2 Cup Washing Soda (Arm and Hammer, but not baking soda)
1/2 Cup Borax
2 Gallon Bucket
1 Quart Hot Water
Hot Water
Directions:

Mix grated soap in a saucepan with 3 pints of water, and heat on low until dissolved. Stir in Washing Soda and Borax. Stir until thickened, and remove from heat. Add 1 Quart Hot Water to 2 Gallon Bucket. Add soap mixture, and mix well. Fill bucket with hot water, and mix well. Set aside for 24 hours, or until mixture thickens. Stir occasionally. Store it in milk jugs or empty laundry soap containers, give it a good shake then pour.

Use 1/2 cup of mixture per load. Use the same amount in your front load washers as well.
It will be chunky. I actually use a little more than 1/2 cup when I wash, but it is cheap to make so not a big deal.

NOW – that you have the directions here are the photos of my experience.  I did very well at this project!
The supplies-  I chose to you use Dove soap.  I like the smell and I know my husband doesn’t mind it…

Now – I didn’t take a picture of it but I transferred all the soap to 2 gallon milk jugs.  They both were filled to the top!

Also -  My friend used Ivory and I used Dove.  We got two different textures.  Hers was chunky and more like jam whereas mine came out smooth like liquid laundry detergent.  We made them exactly the same way so we are assuming that different bar soap produces different consistency.
