Pulled Pork recipe

A few months ago I received this recipe from a very dear friend and I have made it at least a four times since then. It is delicious and extremely easy.

I am officially naming this recipe the Maegan’s Amazing Pulled Pork

What you need:
Crock pot
1 white onion
Boneless Country style pork ribs 3-4lbs
Apple Juice
Brown Sugar
BBQ sauce

1. Spray the crock pot with cooking spray and then cover the bottom with chopped onion

2. Trim the fat from the pork and place on top of the onions

3. Sprinkle 1/2 cup of Brown sugar on top of the ribs and 1/2 cup of Apple juice  

I used an organic juice but any apple juice will work

4.Turn crock pot on low and set for at least 8 hours.

5.Come back around when it only has one hour of cooking time left. Drain the pork in a strainer and return to crock pot

6.Add the sauce and let it cook for the remaining hour. Once it is finished shred the pork (forks do this great)

Add to bun and enjoy!

Overnight Maple French Toast

I rarely make a breakfast dish that requires being made the night before.  I am usually too tired by the time I think about it and I have never found one that sounds tasty.  Well, as I was rummaging through my cookbook cabinet I ran across a series of recipes that my amazing Sister-in-Law had sent me when I had my first child.  I decided to take a risk and make her Overnight Maple French Toast.

Here is the recipe:

Ingredients:
2/3 cup packed brown sugar
1/2 cup maple syrup
1 Tbls butter
10 (1″thick) slices of french bread
11/2 cups milk
4 eggs
1 tsp vanilla
1/8 tsp salt
1 1/4 cups sliced strawberries
powder sugar
1. Spray a 13 x 9 pan.  In a medium saucpan, combine brown sugar, syrup, and butter.  Bring to a boil over medium heat, stirring constantly.  Boil 1 min.
2. Pour syrup mixtrure evenly in the bottom of the pan
3. Arrange the bread slices in an even layer over the syrup mixture
4. In a large bowl, combine eggs, milk, vanilla and salt.  Beat with wire wisk until smooth. 
5. Pour evenly over the bread in pan and COVER.  Refrigerate at least 8hrs or overnight
6. Heat oven to 350.  Uncover and bake 30-35 minutes or until lightly browned
–To server- top each serving with strawberries and sprinkle powdered sugar. Makes 5 servings
I have no idea if this recipe came from a cookbook and she just sent me a few of her favorites and frankly I don’t care. She is one of those amazing people that probably churns her own butter when she is not busy finding a cure for cancer, feeding the poor or raising her four children.

Quick, Easy Smoothie

We are fighting an ugly cold in this house.  My husband brought it home from work last week and I managed, in my “No WAY are we getting sick on the birthday weekend” madness, to keep us all from getting ill….or so I thought.  The youngest was struck down Sunday morning.  Yes, STRUCK DOWN.  This drippy, blotchy, coughy, clammy little munchkin has been in a horizontal position for over 24 hours.  It’s bad. In fact, earlier today I could of sworn I saw a representative from the Department of Health and Human Services drive by to get the address of the house that needs to be quarantined.

Anyways, I asked on my Facebook Fan page  for more homeopathic remidies to feed my kiddo and myself (just in case) and a good friend recommend some plain yogurt.  I took the plain yogurt idea and ran.  Well, not really RAN, because running with yogurt is never a good idea.  I used my plain yogurt for the good of the many!  I made smoothies for the family!!

Healthy smoothie that is also good for the HCG weight loss diet plan
The ingredients
Fresh blackberries
Frozen strawberries
Plain yogurt 
ice 
water (to thin it out)
Stevia 
I just blended them all together until the taste was what I was looking for! After the smoothie was finished I added Echinacea extract for an added punch for the immune system.
Here is another bonus with this smoothie. It is good for us HCG dieters.  You can actually have all these ingredients on the maintenance program.  Boo YA!

Notice the straw?!  I believe that no matter what age you are that a crazy straw should always be included in some part of your drinking repertoire. 
Hopefully, the amount of vitamins I have crammed down everyone’s throat in the last couple of days will keep us all safe from the cold.  If not, watch the evening news for a picture my house and a giant quarantine tape wrapped around it.


 

Making Pine cones sparkle

This evening the boys and I dressed up our pine cones.   I think they look pretty good and I believe they will act as wonderful accents to a centerpiece or around the house.

Here is what you will need:
Mod Podge
Some type of paint brush
Glitter of your choosing.  I chose something that look different from the traditional glitter
Pine cones
(Please excuse the date in the corner.  My kids got a hold of the camera again and turned it on)
The supplies. 
As you can see I dumped the glitter on some newspaper so the cone could be rolled

I painted the ends of the Pine cones with mod podge and then rolled them in the glitter
The mod podge is drying but you get the idea. 
Here is one batch of finished cones. I really liked the white tips so on five cones I mixed in a little white paint with the mod podge and then rolled it in the glitter.
This is a horrible picture but I couldn’t get the lighting right to show off all the sparkle. (p.s. see the boxes in the background?!) 
There ya go.  A quick way to make your Pine cones sparkle.  That is if you have any or if you even want to..

Learning to read with Twister

Twister Reading  – Sort-of

My son is learning how to read in school and he recently brought a list of words home that he needs to learn in the next coming weeks.  I developed a little game for him to play to make it a little more fun. 

I took the spots from my outdoor Twister set (we NEVER use) and wrote the words that he needs to learn.  I tell him the word and he has to jump/walk/run to the next one. 

Here they are spread out–

We have more words but they were spread out throughout the room and I couldn’t get that shot.   I will say that this is working much more than boring old flashcards! 

Homemade Playdough

I made homemade playdough today! It is extremely simple to make and I even had my children help out in the process.

The ingredients are as follows:
* 1 cup flour
* 1/2 cup of salt
* 1 cup water
* 1 tablespoon of cream of tartar
* 1 tablespoon of vegetable oil or canola oil

First mix all the dry ingredients together – The flour, salt, and tartar
Next combine all the liquid ingredients in a saucepan and heat over a medium heat until it is hot – not boiling. This is also the time that you add the food coloring (in the saucepan) See picture below

After the water, food coloring and oil are warm add the dry mixture and continue to stir until it is very thick and sticks to the sides. Below is a picture about half way through the process

Once the playdough has reached a thick and sticky consistency take it out and place it one a floured surface and knead the dough until it is cool. Remember that the dough will be hot at first
