Chocolate Zucchini cake

THIS IS SO GOOD!

Approximately a year ago a good friend of mine gave me a recipe for a Chocolate Zucchini cake.  I don’t remember the reasoning behind it but I was smart enough to keep it.

This week I found my self with two large zucchinis courtesy of our produce co-op and I remembered that I still had the recipe.  Here is the result and the recipe.  YUM

Ingredients:
3/4 cup margarine, soft
2 cups sugar
3 eggs
2 tsp. vanilla
2 tsp. orange peel
2 cups zucchini- grated
1/2 cup milk
2 1/2 cup flour
1/2 cup cocoa
2 1/2 tsp baking powder
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. soda
1. cup walnuts OR Chocolate chips (the chocolate chips were my add in)
GLAZE:
1 cup powdered sugar
1 1/2 tsp mik
1/2 tsp vanilla
Cream shortening and sugar, add eggs, vanilla, orange peel and zucchini.
Alternately mix in dry ingredients and milk
Add nuts OR chocolate chips
Pour into a greased and floured 10″ tube pan or bundt pan
Bake at 350 for 55-60 min.
Cool in pan
Turn out and drizzle with glaze.      
Make it and show the results!!!

Dog Puke and Yummy Brownies

This has been an extremely busy month. It has made blogging really difficult. I typically blog at the end of the day after everyone is asleep but in the last couple of weeks I find that I AM the one that is passed out on the couch….snoring….sometimes drooling….nice picture huh….

Although I have been busy I have come to several realizations –

1. Women that shop at Goodwill on  50% off days are crazy and should be avoided at all costs.  Especially if you are holding a jar that they have been eyeballing for the past five minutes and suddenly they are eyeballing YOU and sizing you up for a possible take down to get that stupid jar.  My children were scared.  We were racing down aisles with mason jars trying to find the nearest exit. 

2. Never start a diet during a month with a birthday party.  I did. Four days before the party..

3.  When babysitting a friends dog LISTEN to their warnings about their pouches odd behavior.  Four days and two pukes (on my couch) later….

4. Never underestimate the power of the brownie…See number 3.  Do you see the word diet?  Stupid amazingly delicious brownie…

5. I am extremely out of shape-  Go bounce in a bounce house with a five year old for forty five minutes and then tell me how your thighs feel.  Burn baby Burn

6. I am obsessed with canceled TV series.  My new favorite – Ally McBeal

Cornbread that rocks my world

Let me just start out this way… Some of you bloggers really know how to cook.  I have successfully made four different recipes from four different blogs and each one was edible.  ZERO Meltdowns….

The most recent recipe that I made was Sweet Cornbread from Recipe Recovery.  Oh…My….Gosh… It was perfect.  It rounded out out dinner and it tasted so good that my kiddos were asking for seconds and they typically hate cornbread.  I was doing  the “That’s right, I made it…I’m awesome” happy dance for the rest of the night.

Magic Oreos and an old trick

I have a birthday party for a friend of mine tonight and I thought I would try a new recipe that Rook No. 17 posted in early December, Oreo Truffles on Stick!

Now this recipe was a little difficult for me because Oreo’s are my all time favorite cookie.  I could eat Oreos everyday and after I hade my second boy, I did…. That was a lot of weight to lose!

Here are the stages of cooking -

Before the slaughter –

My eyes were starting to tear up at this point… my cookies… Here I am about to eat one…
After the execution.  The ingredients were an entire bag of Oreo cookies and one 8 oz package of cream cheese all blended in a food processor…
Now I will admit these don’t look nearly as good as her example, in fact they look a little gross, but they taste so good after that chocolate hardened!
Since the holidays are over I have begun to rummage through my kids toys to seperate what to donate, throw away, and to keep. I attacked their crayon box this morning and I found all their broken crayons and made some new ones… Old Trick but always neat looking in the end.
Finally – I will apologize for the picture quality!  The more I explore other peoples blogs and look at their picture quality the more I realize that I truly have a “cheapo crapo camera.” Oh well- at least I have a camera that does the job.  However, if anyone wants to buy me a new one I won’t say no!  I will even advertise for you.. hint hint..wink wink..Oh whatever, you get the point.
